Almost nobody sets out to overspend. Budgets go wrong quietly: a tile upgrade here, a change of mind about the hood there, an unexpected repair behind a wall, and the number has moved before anyone has said anything out loud.
Decide the number first, then design to it
The most useful thing you can do is establish a realistic budget range before design starts, and treat it as a constraint rather than an aspiration. Good design works brilliantly within a constraint. What it cannot do is absorb one applied at the end.
Finish the selections before work starts
Choosing materials while the job is running is the single most expensive habit in remodeling. Changing a cabinet specification after it is ordered costs money and time. Making every selection during the design phase means the budget can be itemised and fixed before demolition.
Spend where it shows and where it lasts
Layout, cabinetry and anything behind a wall reward spending, because redoing them later is disruptive and expensive. Hardware, lighting and paint are easier to change and are reasonable places to hold back if something has to give.
Hold a contingency
Older houses keep secrets. Set aside a contingency for what is found once walls open, and treat anything left over as a bonus rather than a budget you have to spend.
